Let's make Whoopie! {pies}

I know that's a little corny, but I couldn't resist!  
My MIL came over last night and brought these for a treat for our Family Home Evening.  They were soooo yummy that I had to make them again today for a Mother/Daughter activity I am going to tonight with my 9 year old.  Now, I have to be honest about something.  Parts of this recipe was a FAIL for me (I'll explain later).  When I don't have all the ingredients I usually try and make do with what I have and that doesn't always mean it turns out the way I expect it to.... so here it goes:

Here are the ingredients you need.  I did forget to put the baking soda and cocoa in the picture (whoops!).
1 cup sugar
1 egg
1/2 cup, butter
1 tsp vanilla
1/2 cup cocoa, sifted
1 tsp. baking soda
1/2 tsp salt (I omitted this)
2 cups flour
1 cup buttermilk
Here is one of the times I had to improvise.  I didn't have buttermilk.  What to do??  I put 1 TBSP of vinegar in a cup measurement, then filled the rest of the cup up with soy milk (I don't drink reg. milk).  Let it sit for 5 minutes and you have Buttermilk!  It works great:)  Did you already know that?  
Next, with an electric mixer, beat the sugar, egg, butter and vanilla until light and creamy.  Add the dry ingredients alternately with the buttermilk.  


Here's what the dough looks like after you have added everything!  Yummy:)

Drop batter by heaping tablespoon onto greased baking sheets and bake 7-9 minutes.  
Cool on wire racks.  Makes 30 mini-cakes (it made 24 cakes for me, but mine were huge).
I am showing you this picture so you know NOT what to do.  I didn't have marshmallow cream, so I tried using marshmallows mixed with 2 tsp. corn syrup and butter, then I added powdered sugar.  That didn't work.  It was an ugly yellow color and wasn't fluffy at all.  

So because I was desperate and didn't know what to do, I just melted some marshmallows in the microwave and put them in the middle of the cookies.  It turned out messy, but they taste yummy!  I would recommend using marshmallow cream:)  
Filling:
3/4 cup butter, softened
1 cup confectioner's sugar, sifted
1 1/2 cups prepared marshmallow creme
2 tsp. vanilla
1/4 tsp salt
To make filling, mix together all ingredients well.  To assemble, sandwich a heaping tablespoon of cream between 2 cakes.  
These are the yummiest treat!  Hopefully the girls will love them tonight (if they make it there).
